This Berry Galette is so vibrant and beautiful - it is the perfect weekend dish to make at home. The berries provide this lovely tart flavor that is balanced off with a sweet pie crust. Not to mention, ricotta is whipped with a lot of lemon and basil to finish off with a zesty, earthy taste. I decided to use strawberries, raspberries, and blueberries - but you can use any berries of choice. If you don't feel like making the pie crust at home, then store bought works perfectly well - but I would say it is worth the added effort!
Take all the berries and throw them into a bowl; I decided to leave the raspberries and blueberries whole and chopped up the strawberries. Add zest from a lemon, honey, lemon juice, cornstarch, and vanilla extract. and mix everything together. That's it for the filling! I am providing the instructions for the recipe including how to make the crust, but as I mentioned - if you want to skip that part, then go ahead and buy store-bought and just follow the recipe for the pie filling and the assembly!
