Chipotle & Honey Chicken Wings

Makes 20 Wings



  • 1 kg chicken wings

  • 3 tbsp store bought chipotle paste

  • 1 lime, juiced

  • 4 tbsp honey

  • 1 tbsp brown sugar

  • 1/3 cup ketchup

  • 2-3 tbsp vinegar, for thinning

  • Cayenne pepper, to taste

  • Chives, for garnish

For wings:

  • 3-4 heaping tbsp baking soda

  • Salt, to taste


Preheat oven at 120C (250F). Pat wings dry with a paper towel. In a large bowl or plastic bag, toss wings with salt and baking soda until they’re fully covered. Place on a baking tray (on top of foil paper) in the lowest rack on oven. Bake for 30 minutes. Then, turn the oven up to 220C (425F). Place wings on a higher rack and bake for another 40 minutes, rotating once in between (no need to turn the wings over).

In a pot on medium heat, mix together all the ingredients for the sauce to marry.

Once wings are cooked through, toss in chipotle mixture. Serve with blue cheese and enjoy.
