Fattoush Salad


Serves 4

INGREDIENTS:

  • 3 cups romaine lettuce, chopped

  • 4-5 small radishes, sliced

  • Crushed black pepper, to taste

  • ½ large cucumber, diced

  • ½ green pepper, diced

  • 3 whole wheat pita bread, cubed

  • Olive oil or olive oil spray

  • ½ cup fresh parsley

Dressing:

  • 4-5 tbsp high quality olive oil

  • 1 lemon, freshly squeezed

  • Crushed black pepper, to taste

  • Crushed sea salt, to taste

  • 2 tbsp Balsamic Vinaigrette or Pomegranate molasses

  • 1 tbsp sumac

DIRECTIONS:

To make the salad dressing, in a bowl, whisk together olive oil, lemon juice, and balsamic vinaigrette. Add the salt, pepper, sumac and continue whisking. Set aside.


On a large non-stick pan over medium heat, spray or drizzle with olive oil and add pita bread pieces, Toast the bread until you have a nice golden-brown color then remove from heat. In a salad bowl, add chopped romaine lettuce. Add the radishes, cucumber, and green peppers. Add the parsley and finally add the pita bread in. Evenly distribute the salad dressing and toss until everything is coated.


Serve immediately and enjoy!
