Greek Style Nachos


Serves a party

INGREDIENTS:

  • 1 bag corn tortilla nachos

  • 1 large package fresh spinach

  • 3-4 large garlic cloves, finely chopped

  • ¾ cup full fat Greek yogurt

  • 1 bunch fresh Parsley

  • 1 tbsp smoked paprika

  • 1 lemonSea salt, to taste

  • ½ package feta cheese Olive oil

DIRECTIONS:

In a large pan over medium-low, drizzle olive oil and add garlic. Lightly brown, then pour full package of washed spinach in. Add salt. Stir occasionally for 5-10 minutes until spinach has fully wilted.

In a blender, add Greek yogurt and squeeze the full lemon. Add parsley and paprika and blend until you have a nice, deep green sauce.


Finally, to plate, take a large plate and pour a bag of nachos. Spread out the spinach mixture, drizzle the Parsley sauce, and finally top with crumbled feta cheese. Serve and enjoy!
