Labneh with Green Chutney, Mustard Roasted Potatoes and Cumin Seared Eggplants


This was such a fun dish to make, especially given that we got to make this with over 80 other people over a virtual cooking class hosted by Yelp. Quarantine cooking has been no joke for so many people, but in a way - it has definitely pushed people to recognize their own talents in the kitchen and go beyond their comfort zones. This dish is no exception to that rule, as participants from all over the country joined in, bringing their different skill levels and background to the table to produce one final, beautiful product.


I like to think of this dish as Indian fusion - it mixes so many different parts of India into one plate and is finished off with a hearty pita bread to bring it all together. While it may seem like there are a lot of steps involved, you can get this from the stove to your plate in under an hour - and while you're doing that, learn a lot of new techniques that you can apply to other facets of cooking.


We were able to raise over $200 to Feeding Tampa Bay as a result of this class, and I am so looking forward to doing more of these so that we can all cook safely and soundly from within our own kitchens, while continuing to build a beautiful and connected community!
