Vegan Masala Tofu Scramble Recipe | Tofu Bhurji


I used to make masala eggs all the time, and have a great recipe for it as well - but one day, I decided to try out a similar recipe using tofu instead, and I was really surprised with how good the results were! This Masala Tofu Scramble is vegan and gluten-free, and it can be made in under 20 minutes.


It has all of the beautiful Indian spices in it that make it so special, including garam masala, turmeric, chili powder, and lots of garlic. Many people complain that tofu doesn't have a lot of taste, but that is the beauty of this dish; the tofu so delicately absorbs all of the strong spices and creates an extremely flavorful bite. This is a recipe that you can throw together so easily for your family if you're looking to try something different instead of the standard egg scramble!


The first thing to do when you're cooking tofu is drain the tofu from the package and dry it in a paper towel under a heavy object. This will give you an easier consistency to work with, and it will dry out the tofu well enough to give it a texture that resembles eggs.


To start, heat up a pan and add some olive oil in it. Chop the garlic and onions and cook them down before adding the tomato. Then, add salt and the spices and let the onions and tomatoes cook down for a while together.


You want the tomatoes and onions to really cook through without getting burned, so you have to keep the heat on a medium-low setting and let them get a mushy texture (similar to what you would do for a shakshuka recipe). This will take 5-10 minutes in total, and you'll immediately be able to smell the different flavors in your kitchen!

Once the onions, tomatoes, and garlic have cooked down like the picture above, add your oat milk in! You can go ahead and choose another non-dairy milk here, but I prefer oat milk because it is so creamy and decadent. It thickens up really well when cooking, so it really goes perfectly with the tofu scramble.


Finally, take that drained and dried tofu and crumble it little by little with your hands. Mix everything together and garnish with some vibrant, earthy coriander.


You can have this tofu scramble in so many ways, which is my favorite element of this dish! For example:

  • Roll it up into a wrap

  • Place it on top of avocado toast

  • Have it in a toasted bagel
