Traditional Hummus

Updated: Feb 4, 2020

Serves a party

INGREDIENTS:

  • 1 can chickpeas (15 oz)

  • 1 lemon

  • 1 large garlic clove

  • 3-4 tbsp tahini

  • 1 tbsp Pink Himalayan salt or sea salt

  • ½ tsp cumin

  • 4-5 tbsp high quality olive oil

  • 1-2 tbsp water, as needed

  • Cracked black pepper, to taste

  • Smoked paprika or za’atar

DIRECTIONS:

In a blender (I used the bullet) or food processor, throw in chickpeas and garlic clove. Squeeze the juice from the lemon in, and add salt, cumin, black pepper, and tahini. Start blending, and gradually add in olive oil. If the consistency is still too thick, feel free to add a couple of tablespoons of water just to thin out the hummus texture.

To serve, spread in a bowl and flatten with a spoon. Create a round indent and drizzle olive oil. Sprinkle smoked paprika or za’atar and serve.
